Spaghetti Squash

Spaghetti Squash is so fun! I love vegetables that can take the place of less nutritious foods, and spaghetti squash lives up to its name. You can substitute it for hot or cold pasta.

I love it hot with a tomato sauce and organic ground turkey, or baked with goat cheese and pesto.

Fun fact: Spaghetti squash is one of the lower-glycemic squash, so it’s great if you’re watching your sugar intake!

Tip: Spaghetti Squash can be plain yellow or have green stripes. It doesn’t look like spaghetti until after it’s cooked and you scoop it out of the skin.

 

Super Simple How To: Roasting Instructions

 

Poke several holes all around your spaghetti squash with a fork. Roast it whole in a 400 degree oven for 40 minutes. Once it’s cooled, cut it in half lengthwise, remove seeds, and then scrape the insides out with a fork.
