Delicata Squash

Delicata Squash is another winter squash that you’ve seen around. It’s cream colored with green stripes and you might know by some of its nicknames: peanut squash, bohemian squash, or sweet potato squash. But as its proper name suggests, the skin on this squash is completely delicate and can be eaten really easily. This baby is so delectable, you can literally just cut it in half, drizzle some xvoo, sprinkle some salt, roast, and eat. It really doesn’t need anything. You could always stuff it with meat or veggies if you want to be a little fancier, but I like it totally plain, and the skin dissolves in your mouth.

Super Simple How To: Roasting Instructions

Slice delicata squash in half lengthwise.

(For extra nutrition, you can remove the seeds and roast them separately with some salt.)

Drizzle with XVOO and sprinkle with sea salt.

Roast in a 400 degree oven for 40 minutes or until tender when poked with a fork.

Cool & slice into little half moons… enjoy!
