Collagen Date Balls

You know I love to make healthy, natural, easy snacks. Why should it be hard to enjoy a treat? These collagen date balls have protein AND reduce waste by using nut pulp from making nut milk. There are a few steps involved, but they’re pretty easy. See below.

Ingredients

1 cup date paste*

2 cups nut pulp from nut milk (dried in oven at 350 for 45 minutes, then cooled)

1 teaspoon cinnamon

2 scoops collagen (I like Vital Proteins brand)

1/4 cup coconut butter (I use Artisana)

1/4 teaspoon sea salt

juice from 1 orange

*to make date paste, soak pitted dates in water overnight in the refrigerator, then drain water and blend soaked dates OR you can soak in hot water for 30 minutes and then blend.


  1. Mix everything together until uniform.
  2. Roll into balls or cookies
  3. Freeze or refrigerate for 2 hours
  4. Sprinkle some matcha on top for extra energy and enjoy!
