paleo pancakes

A great snack or treat for the kids, paleo pancakes are packed with protein and still taste delicious. The coconut butter caramel sauce makes these a decadent treat, but you can skip it if you want to go low sugar. Keep these around at room temp for when the kids get home from school for the perfect nutritious after school snack.



3 eggs

½ cup coconut milk

3 tablespoons coconut flour

1 tablespoon hemp seeds

2 tablespoons dried blueberries (optional)

½ teaspoon cinnamon

¼ teaspoon baking powder

1 scoop protein powder

¼ cup coconut butter (for sauce)

½ cup maple syrup or honey (for sauce)


  1. Heat the coconut butter and maple syrup or honey together and set aside (for caramel sauce)
  2. Whisk remaining ingredients together
  3. Heat a small pan with a drizzle of coconut oil
  4. When the pan is hot, ladle the batter into pan and cook 1 minute on each side
  5. Top with coconut butter maple sauce, berries and coconut flakes
