These are amazing for kids because you can sneak in protein (!) and flax meal. Using sunbutter (from sunflower seeds) means they are tree-nut free, making them safe to bring to school, where peanut butter or almond butter might not be allowed. There’a s little maple to sweeten it, but these are not a sugary snack. For an extra treat, add some organic vegan chocolate chips, dried blueberries, shredded coconut, or whatever makes your kids swoon!
- If you buy raw buckwheat groats, you can roast them for 15-18 minutes at 350 til golden brown and then let them cool.
- Mix all ingredients together in a large bowl and shape them into balls or flatten into cookies.
- Put them in the fridge to harden. You can eat them cold or at room temp.
