school-friendly sunbutter balls

These are amazing for kids because you can sneak in protein (!) and flax meal. Using sunbutter (from sunflower seeds) means they are tree-nut free, making them safe to bring to school, where peanut butter or almond butter might not be allowed. There’a s little maple to sweeten it, but these areΒ not a sugary snack. For an extra treat, add some organic vegan chocolate chips, dried blueberries, shredded coconut, or whatever makes your kids swoon!

Ingredients
2 cups buckwheat groats, toasted
1 cup sunbutter
1 scoop favorite protein powder -I use Nuzest vanilla
1/4 cup maple syrup
1/4 cup flax meal
2 tablespoons coconut butter (melted)
1/2 teaspoon cinnamon
1/2 teaspoon sea salt


  1. If you buy raw buckwheat groats, you can roast them for 15-18 minutes at 350 til golden brown and then let them cool.
  2. Mix all ingredients together in a large bowl and shape them into balls or flatten into cookies.
  3. Put them in the fridge to harden. You can eat them cold or at room temp.
