paleo oatmeal

This paleo oatmeal was a hit at my breakfast cooking class! It’s not sweet, so you can always sweeten it up with some maple syrup, raw honey, or stevia, and top it with something delicious like granola, berries, or cacao nibs. ½ cup shredded coconut flakes

1 tablespoon coconut oil

1 tablespoon coconut butter

¾ cup raw pecans

¾ cup raw walnuts

¾ cup raw almonds

2 tablespoons flax meal

2 tablespoons hemp seeds

2 teaspoons cinnamon

1 teaspoon vanilla

¼ teaspoon salt

2 pitted dates

2 drops of stevia or 2 tablespoons honey or maple syrup

2 ½ cups boiling water, plus more if needed


A scoop of protein powder or collagen

  1. Combine all ingredients in a high speed blender, blending for 60-90 seconds until creamy
  2. Serve hot or cold with your favorite toppings
