It’s summer now, and summer shouts one thing to me: stone fruit! This peach gazpacho is the perfect summer dish. I love to serve this as a starter with a glass of sparkling rose and some cheeses. It also makes a great light lunch with a green salad. For something extra, I love to add a seared scallop or grilled shrimp skewer.
- In a high speed blender, puree the peaches, cucumber, water, and oranges until smooth.
- Then add all the other ingredients and blend 10 seconds. You can add more water if it’s too thick.
- Chill a few hours in the fridge, and top with a drizzle of olive oil, and a few edible flowers just before serving.
