white peach gazpacho

It’s summer now, and summer shouts one thing to me: stone fruit! This peach gazpacho is the perfect summer dish. I love to serve this as a starter with a glass of sparkling rose and some cheeses.  It also makes a great light lunch with a green salad.  For something extra, I love to add a seared scallop or grilled shrimp skewer.

6 white peaches, peeled, chopped
1 small cucumber, peeled, chopped
1 1/2 cups water
Juice from 2 oranges

3 tablespoons coconut butter
1 garlic clove
2 tablespoons white wine vinegar
1/2 teaspoon salt
1/4 teaspoon crushed red pepper or espelette (my favorite pepper)
  1. In a high speed blender, puree the peaches, cucumber, water, and oranges until smooth.
  2. Then add all the other ingredients and blend 10 seconds.  You can add more water if it’s too thick.
  3. Chill a few hours in the fridge, and top with a drizzle of olive oil, and a few edible flowers just before serving.
