I love the coconut family and all of its health benefits, so naturally I’m kind of obsessed with raw coconut, and I’ve been having fun creating coconut yogurts. Coconut meat is great to keep in the freezer to throw into smoothies or soups, or blend with water to make your own coconut milk. This yogurt has probiotics in it and only has 4 ingredients. You know I love to keep it simple so the fresh beauty of the ingredients can shine.
1 pound fresh coconut meat (you can find this frozen at your grocery store)
1 large carrot, peeled and chopped
1/2 large banana
1 cup coconut water
2 probiotic capsules
- Blend the carrot, coconut meat, and banana together in a high speed blender until creamy.
- Empty the probiotics from the capsules and stir in at the end.
The yogurt will keep for 4 days refrigerated.
Top with: shredded coconut, seeds, and fresh fruit
