cauli-sweet potato smoothie bowl

As you know, I love to use frozen veggies in my smoothie instead of frozen fruit to keep them low-sugar. Cauliflower is so mild that it’s a great filler you can hardly taste, so it’s a good one to sneak into kids’ smoothies! I really love all sweet potatoes, no matter the color. For this one, to keep the color light, I used a white sweet potato.


Ingredients

¾ cup frozen steamed cauliflower*

1 cup frozen roasted, peeled & cubed sweet potato*

½ frozen banana (I use a whole banana for my nephews)*

¼ cup coconut milk

¼ avocado

1 teaspoon maca

1 tablespoon mesquite powder

1 tablespoon lucuma powder

2 dates**

Optional:

a few ice cubes

a scoop collagen (not vegan)

Top with:  

cacao nibs, seeds, granola, fruit


Blend everything together using a High speed blender until it’s a creamy texture, adding another splash of coconut milk if you need it.

*This smoothie bowl only works if your veggies and banana are frozen.  I steam then freeze my cauliflower. For sweet potatoes, I will roast, let cool, then peel and cube my sweet potato, portion into baggies and freeze. You can even reuse your baggies 🙂

**For a sweeter version you can add 1 tablespoon of maple or honey.  Sometimes I omit the dates and add a scoop of my Sun Warrior protein powder that is sweetened with stevia.
