broccoli salad

I love this salad because it’s light and it’s a great way to use veggies you have ready from your meal prep day. I love the texture of the steamed broccoli with the raw stems and carrots… add the nuttiness of the hemp seeds, and I’m in heaven.  This salad is packed with omega 3s, fiber, plant protein, and great fat. Plus the health benefits of broccoli are endless…high in b vitamins and vitamin c (making it a great antioxidant,) vitamin k, and calcium, and it’s great for helping to lower cholesterol.  I eat this as a side with my veggie soup for a light plant-powered meal or add roasted chicken or fish to it for extra protein.


Ingredients

2 heads broccoli, steamed and chopped

raw broccoli stems, shaved

2 large carrots, grated

¼ cup extra virgin olive oil

juice of 1 lemon

½ juice of orange

1 teaspoon sea salt

a pinch of crushed red pepper

¼ cup hemp seeds


Combine all the ingredients in a bowl and toss with your hands to distribute the oil, lemon juice, seeds, salt & pepper evenly. Enjoy!
