If you are making homemade nut milk, you have probably had the thought There must be something I can do with this nut pulp!
My gift to you: Paleo Granola.
2 1/2 cups nut pulp
1/2 t sea salt
1 1/2 cups nuts & seeds –your choice– I use sunflower seeds, cashews, almonds, pecans
1 tablespoon cinnamon
2 tablespoons chia seeds
1 cup coconut flakes
1/4 cup water
5 tablespoons maple
6 tablespoons coconut oil
1 tablespoon vanilla
2 tablespoons date paste (1/4 cup dates soaked with 1/2 cup water overnight and blended)
- First, dry the nut pulp by spreading on a baking sheet and baking it at 375 degrees for 1 hour and let cool.
- Whisk together the dry ingredients
- Separately, whisk together the wet ingredients, then add them to the dry ingredients and mix until combined.
- Bake at 325 degrees for 1 hour, stirring every 15 minutes. Be careful not to let it burn!
