paleo granola

If you are making homemade nut milk, you have probably had the thought There must be something I can do with this nut pulp!

 My gift to you: Paleo Granola.

Dry Ingredients
2 1/2 cups nut pulp
1/2 t sea salt
1 1/2 cups nuts & seeds –your choice– I use sunflower seeds, cashews, almonds, pecans
1 tablespoon cinnamon
2 tablespoons chia seeds
1 cup coconut flakes
Wet Ingredients
1/4 cup water
5 tablespoons maple
6 tablespoons coconut oil
1 tablespoon vanilla
2 tablespoons date paste (1/4 cup dates soaked with 1/2 cup water overnight and blended)

  1. First, dry the nut pulp by spreading on a baking sheet and baking it at 375 degrees for 1 hour and let cool.
  2. Whisk together the dry ingredients
  3. Separately, whisk together the wet ingredients, then add them to the dry ingredients and mix until combined.
  4. Bake at 325 degrees for 1 hour, stirring every 15 minutes.  Be careful not to let it burn!
