cacao yam pudding

This pudding is a delicious, power packed treat!  It’s full of nutrition and great fat, while the raw cacao and cacao nibs give me energy.  And of course … no added sugar!  There is plenty of sweetness from the roasted yams, but if you crave a sweeter pudding, add a couple of tablespoons of honey or maple.  This pudding is paleo, gluten free and vegan.

3 medium sized yams
5 tablespoons raw cacao
2 tablespoons coconut oil
1 tablespoon chia seeds
1 tablespoon hemp seeds
1 teaspoon cinnamon
1 tablespoon vanilla extract
1/2 teaspoon sea salt
cacao nibs and hemp seeds to top

optional: 1 scoop collagen for extra protein (not vegan)

1. Roast the whole yams with skin on for 45 minutes at 400 degrees until nice and soft.

2. Once cooled, peel the roasted yams and puree all the ingredients together in a food processor or blender until smooth.  Top with nibs and seeds, and refrigerate and enjoy!
