“fried” carrots with amazing green dip

I am obsessed with my new air fryer – what a game changer.  I get “fried” veggies without all that oil, and it’s so easy and so fast! Normally it would take 45 minutes and a ton of oil in the oven to get these beautiful caramelized carrots. Just 15 minutes in the air fryer with a touch of avocado oil spray and a pinch of sea salt. Amazing. You can make fries out of potatoes, carrots, sweet potatoes, or squash.

This green dip  is its own kind of superfood, and it’s easy and fast. I’ve been adding chlorella anywhere I can to help (especially while flying so much) with immunity and pulling metals from my body. Chlorella is also great to supplement while doing a vegan day because it is loaded with protein, b vitamins, and omega 3s.

3 bunches small/medium carrots

1 teaspoon sea salt

avocado oil spray

3 avocados

2 teaspoons chlorella

juice of 1 lemon

½ teaspoon sea salt

1 tablespoon hemp seeds

  1. Wash your carrots (or peel them) and cut them in half. Put them in the air fryer*, spray with just a touch of oil and sprinkle with sea salt.
  2. Cook them for 15 minutes at the highest temperature, 400 degrees. (If you want them extra crispy, cook an extra 5 minutes.)
  3. Halfway through the cooking cycle, remove the tray and shake it so the carrots cook more evenly.
  4. While the carrots are cooling, remove the skin and pit from the avocados and mash them with a fork, mixing in the chlorella and salt. Sprinkle hemp seeds on top and enjoy!

*If you don’t have an air fryer, roast in oven at 375 for 45 minutes

try sun chlorella 🙂 the benefits of the air fryer are that it uses less oil and takes less time! so it’s easier, quicker, and less oily!
