Turmeric Roasted Parsnip & Celery Root
Looking for something to bring to Thanksgiving? This is warm and inviting, healthy, and delicious. And it’s probably a safe bet that no one else will bring the same thing.
2 small celery root, peeled
4 large parsnips, peeled
1/4 cup coconut oil (melted)
2 teaspoons salt
1/2 teaspoon cinnamon
1 teaspoon black pepper
1/2 teaspoon paprika
2 teaspoons turmeric powder
2 tablespoons sherry vinegar
Juice of 1 orange
Preheat oven to 375.
Slice celery root into 1/4 inch slices.
Slice parsnips on the bias in 1/4 inch slices.
Toss celery and parsnips in a large bowl with the coconut oil, orange juice, vinegar and spices.
Roast for 40 minutes, stirring a couple times for even browning.
