Oatmeal is delicious, but when I’m in the mood for something light, oats are a little heavy. I love this Cauliflower Oatmeal because it is light, grain free, sugar free, and still delicious. Plus, I’m a fan of vegetables morning, noon, and night.
1 head cauliflower, riced (pulse in a food processor until it resembles rice)
1 ½ cups your choice of milk
2 scoops your choice of protein
2 teaspoons cinnamon
2 teaspoons vanilla
¼ teaspoon salt
toppings of your choice
Boil the milk in a saucepan, add the riced cauliflower, and cook over high heat for 5 minutes.
Blend one cup of the cauliflower-milk mixture with the rest of the ingredients (except your toppings) in a blender.
Add the blended mixture to the saucepan and cook for another 2 to 3 minutes over low heat.
If you want it to be thinner, add more milk.
Top with your choice of fruit, nuts, seeds or cacao nibs. I love to drizzle some coconut oil on top when it’s hot, or even mix in some matcha. This recipe is sugar free, but if you don’t mind sugar, you can drizzle a little raw honey or maple on top to sweeten it up.
