grain free yam toast

I love that this toast has yams in place of bread. If you know me, you know I love yams because they’re low-glycemic compared to sweet potatoes, but still have that delicious flavor. I love subbing grilled or toasted yams for any toast: egg salad, turkey & cheese, almond butter with banana & honey, or avocado & sea salt!

But my favorite part of this toast is that it inspired me to create paleo carrot turmeric hummus. I love anything that reduces waste, and I use the nut pulp from making almond milk as the base for this hummus instead of chickpeas, making it paleo-friendly!

Ingredients

2 yams, peeled and sliced into ½ inch pieces

2 radishes, sliced

Pesto

Sea salt

Flax oil or avocado oil

Paleo Carrot Turmeric Hummus

 

Toast yam slices on high in a toaster twice.

Top with carrot hummus, pesto, some diced radish, a sprinkle of sea salt and a drizzle of flax or avocado oil.
